I've been working for a former colleague for several years now on a freelance basis. Initiallly, payment was fairly prompt and made within a week of invoicing. Now it has slipped to gradually to three months. I recently got an email apologising for the delay and attributing to cash-flow problems (This is despite the business taking in reasonable money on a monthly basis).

Fortuantely, I only work one day a week at the practice, otherwise I would be up the faecal creek....

So do I start getting angry? Quit or go for the legal route?

Tell them you are unable to do anymore work until outstanding invoices have been settled?

Yeah step on it hard mate. He is probably leveraged up or something and needs the cashflow to service his debts or similar.
3 months is way too much. As above stop now before you lose more. Do something like explain you have a cash issue yourself and need payment asap.
Never ever let invoice go unpaid ever.
