Not sure if this is the best place to ask this but...

I'm buying a used range cooker on ebay. Whats payment method gives me the best protection? Paypal? Credit Card?

The seller is new (only 3 items sold) so am a little nervous.

As a buyer, PayPal is probably your best bet. They tend to fall in favour of the buyer in the event of a dispute.

Credit cards can do the same, but it's usually a more long winded process.

However, if they are an established trader or retailer than can accept credit cards via their main outlet, then their eBay rating wouldn't be too much of a concern

Paypal. Huge buyer protection, to the extent that, assuming that they are not couriering it to you, you could reclaim the payment once you have collected it, and there is actually little that the seller could do. If you were an horrible person.

if the seller only has had 3 sales, I doubt he will be set up to take a credit card

Assuming you are collecting it, cash on collection.
