Is anyone able to confirm - my understanding is that you can use gift aid in the FY after the tax year you're submitting a return for, so I could wait until the year is through, calculate my tax liabilities then donate to charity to bring down the impact on my personal allowance?

trying to work out if I can deal with it all after the tax year has ended so that I'm able to work against actuals rather than my estimates.

I don't think so. It's the date of the donation.

Every tax return I have done has had a tick box for "in the current tax year" or "in the previous tax year".

That’s what I do to manage my tax liabilities around tax brackets when I’m close to a threshold. There is a section on the tax return form about which charity donations are paid in which year so you can “move” donations backwards or forwards a year.
