Nothing wrong with Ulster Bank, really (it's part of NatWest).

That 5.20% rate is offered on its Loyalty Saver product. However, to be eligible, you have to already have an Ulster Bank current account.

Monument and Chase both offering >5% on instant access savings.

Chase is part of JP Morgan.
Monument is small but FSCS insured, so you’re covered up to £85k. I think minimum deposit is £25k.

Chase is 5.1% with the boosted account.

Shifted over to Trading 212 and stuck what I had in their Cash ISA @ 5.2% - also get accrued interest added daily on here, which is cool

Moved away from Santander months ago, when like we've seen here, their rate plummeted - I'm sure they got a few newbies signing up, but I am sure many have closed their accounts and took their money elsewhere.
