Summer house with thatched roof.

Looking for a new project in the garden so am thinking about building a summer house/gazebo. I want it to look rustic and am thinking about building an oak frame with a thatched roof, maybe clad with a waney edged board. Size is approx 3mx3m and I want it to be open on one or more side i.e without doors.
Does anyone have a similar structure in their garden?
With regard to the thatched roof: what is the minimum pitch allowed with this type of covering?
Any help, thoughts, advice and pics welcome.

There was a programme on recently(ish) where people learnt crafts, and one of them was learning to thatch. It's worth hunting out, although I'll admit I haven't given you much to go on
