No reason it shouldn't work assuming it's foam though you'd have a fun time rolling it if it was already fully vacuumed as it'd be solid, you'd have to roll it when only part done.
Vacuum cleaner might have enough suck, I always used a dedicated pump; not fast but great at pulling vacuum.
I suspect the factory packing is just done mechanically to press & roll & wrap.

I have a double mattress vacuumed and rolled up under the eaves for guests, the process was dead simple. I was as skeptical as you sound, but I figured it was worth a go.
I think I started sucking the air out then rolled it up before it started to go stiff. You get some straps with the bags that you then use to roll it up tight as you get more of the air out. Would recommend.
