How long to wait for grouting patio

Had a patio installed this week to act as a greenhouse base. Dijon limestone.

Instructions for the recommended grout say wait 7-14 days(!) and just be fully dry before grouting. I appreciate they’re probably right but realistically with our weather might never get done!

Wondering how bad it’s likely to be if I just went ahead tomorrow when we do have a weather window.

Grout was recommended by the stone supplier and is here:

Anyone know what might happen if I just get on with it?

With the weather we’ve had in East Anglia these last few days I would just get on with it.
I had to pull a slab up I had laid the previous day this week and it was no fun breaking out the bed it was on.
