I suspect any delay is due to off-site dependancies. i.e. the traffic goes to Eufy's server somewhere on the planet, then presumably back to your phone.The Lion's share of the delay is going to be in the processing rather than the data transit.
Another WiFi node near the door probably isn't going to help. So called 'mesh' stuff is another matter entirely. Probably a 'range extender' if anything at all. But fundamentaly, you need to determine where the problem is.
We have a Eufy doorbell/camera and the base station that does the ringing/recording is plugged into a socket in the hall way, so about 12 feet away. Don't have a big issue with delays, although the base station rings, the Alexa announces someone is at the door, then my phone goes, all in about 2 secs...
