Potted Trees/Plants to shield

My decking in nearly finished but as the row of gardens are on a slight incline I can see clearly into my neighbours garden which I don't like and I presume he won't be too fond off (but as he is looking uphill it will be harder for him to see).
So I'm looking for some screening provided by some potted plants that around 5/6/7ft high that are easy maintenance. Only I know the square root of nothing about gardening really.
Do such a thing exist?

Because the soil in the pot is not connected to the rest of the ground, it will need watering regularly in hot weather (and when you go on holiday), and because it is exposed on all sides, will freeze before the rest of the ground in winter. So yes, you have to be more watchful.Will potted plants demand more than this?
