At the end of my drive i have a pair of brick pillars that the gates attach to, someone has clipped one and the pillar has come loose from the mortar (between two layers of bricks) and now moves. Can I just slop some new mortar in and "stick" it back together?

You can, but unless you remove the existing mortar, you will have a bigger joint, which may affect whether the hinges work or not.

It will also depend on how heavy the broken off lump is, as to whether you need a crane/crowd of blokes to re-seat it.

I had this with a few pillars at our last house.

I used an impact adhesive which worked fine , but also on a section hidden by planting I fixed some straps across the joint to ensure it never moved.

Just be carefull , the piers are heavy beyond belief ,
If this pier falls on somebody you will be responsible .

Thanks, I will have a look for some adhesive and the straps are a great idea.
