How much would you be willing to pay for someone to make and fit a new front door for a cottage? My mums been quoted £1500 and I think this is a bit steep.

Depends what that quote if for.
If it is a solid Oak door, and purpose made frame, old door out and new one fitted and made good, I would say about right, depending on area.
South, about right, North £couple of hundred over

A few years ago I had a 4 panel hardwood front door made for my victorian house, with new frame including curveded fanlight, was about 1k and that's up north.

Depends on door, does it include a new frame? Assuming the opening is out of plumb fitting could be an absolute pain. Decent ironmongery included?

Doesn't sound unreasonable, we need a new door for an old cottage, being an odd size & really needing to be oak, ity was north of £2k from most decent places.

I don't think the material will make a huge amount of difference, the work is the same. We had an oak door in our last house which cost 1000 - made to fit and fitted. The identical one in a softwood was 800 ish.
1500 doesn't sound too bad - depends what is involved. style, glass, etc etc.
It starts to make finding a non vat registered joiner worthwhile though.
