We're planning on relocating to London in the new year and are currently scouting for flats.

Running the usual gauntlet of what the internet has to offer in terms of Foxtons (IMHO: overpriced), Gumtree(IMHO: 50% fraudulent) and Rightmove (IMHO: not too bad), but wondered if there was any other resources I'm missing ?

What's the best way to find a flat in London (specifically 2/3 beds in SW or Greenwich coming in at less than 2k per month) ?

All agents will advertise in Findaproperty or Rightmove. Those are the only 2 sites you need for legit stuff. Gumtree is OK for bedsits and landlords who don't want to use agents but the quality can be very hit and miss.
Those are the only 3 you need!
