What s the safest dog setup in a camper van?

Looking for some advice from those with dogs in a VW camper / Transporter type setup.
We’ve got a medium sized dog and I’m trying to figure out the safest way to secure her for travel without using a crate or giving up loads of living space.
Most of our trips are usually short and local, but we’re doing a longer European road trip this summer and it’s got me thinking about the best setup. It’s also the first vehicle we’ve had without a separate boot area, so this is all a bit new to us.
In our setup we’ll likely be removing one rear seat on trips, so no spare seatbelt point there. She already has a good quality harness, but I’m conscious a walking harness and a crash tested car setup aren’t necessarily the same thing.
Priority is everyone’s safety really. Hers included, obviously. But equally I don’t fancy a 25kg missile flying through the van in an accident.
I’ve seen people mention rail anchors, tether points and crash tested harnesses, but keen to hear what people are actually using in a van / Cali / Transporter setup and what works well in the real world.

I'd check the laws across Europe on whats needed, I'm pretty sure you're required to have dogs attached to seatbelt points.
We drove down to Spain in December with our Rhodesian & border collie ... I bought one of those fold out dog carriers and had both on the back seats with a load of duvets ... both had harnesses with straps which clicked into belt points. They had the three back seats and had plenty of room (Ford Transit Connect hybrid - basically a VW caddy) so a single seat for a small/medium sized dogs is probably ok.
