Vegas - must do's...
Discussion
Helicopter tour over and into the Canyon. (Avoid the West Rim (it's touristy and overpriced))
Catch a show (cirque at MGM is a winner)
Hire a car and head to Death Valley
ride a couple of the coasters at the casinos
end a night in the NYNY bar listening to the duelling pianos
head to the car museum at the Imperial.... well worth an hour
go see the fountains at the Bellagio
plenty to do in Vegas, what kind of things are you into?

- Go for a gondola ride at The Venetian
- Shopping at Caesar's Palace
- Meal in the Top of The World rotating restaurant at The Stratosphere
- Visit the Welcome to Las Vegas sign
- Go for a night out at the Voodoo Lounge at The Rio (top of the hotel, you can see for miles)
- The Cirque du Soleil show at The Bellagio, pricey but best in town IMO
My girlfriend and I were there for a few nights last year and we left all the out of town trips for another visit, since there's so much to see and do already.

Sound advice. Lake Mead, Death Valley, a multiday trip to Grand Canyon / Monument Valley, and even a trip up to the perimeter fence of Area 51 have been added to our next trip. Vegas is one of those places you could easily spend a fortnight, since there plenty on offer in the city itself plus worthwile excursions in all directions. For any petrol head, this is also a must (AND FREE!).
http://www.shelbyautos.com/tours.asp . Often all sorts of exotica testing at the Motor Speedway next door, too.
Also, if you get 'Vegassed out', take a drive out to http://www.birdandhike.com/Areas/RR_Area/_RR_Area.... - some really good hiking and great views of 'the strip' in the far distance.
Enjoy Vegas!

Having got back, I would thoroughly recommend heading into Death Valley for a day. Go on the Death Valley National Park site and download a map of "routes from Vegas" and then take the scenic route there. Me and 5 mates did it and just had to keep stopping to take more pictures, absolutely amazing!
We took quite a while to get there then took the shorter route back. We all agreed it was our best day out!
Other than that, we did hit Andre's in the Monte Carlo for a bit of a "treat" whilst we were there. Expensive, but top quality.
Enjoy!

Cirque du solais - we did Ka, which was awesome (mgm). I believe they are all great though.
The rollercoaster on NYNY (stratopshere is miles away).
Olives resteraunt, Bellagio. Not daft expensive, and damn, it was good!
I did death valley, interesting but I think the GC would be better. Miles of desert is always pretty much desert!

Some tips gleaned from my latest trip
The 20 dollar trick: http://www.thetwentydollartrick.com/
This worked for me in Planet Hollywood.
If you're seeing the Titanic and/or the Bodies exhibition, take advantage of the 3-for-$54 offer
http://www.luxor.com/entertainment/3for54.aspx
If you're using the Deuce bus along the strip, be aware that it can take the best part of 2 hours to get from one end of the strip to the other. wherever possible, leave the Deuce bus pass you by and get the Express bus.
I got back yesterday and, thanks to a wicked case of food poisoning in Chicago on the way back, I have managed to get home 3 lbs lighter than I left. Given the portion sizes in Vegas, this is quite the achievement.

Seconded - worked in the Bellagio too (although, it might actually have ended up being a 50 dollar trick...).This worked for me in Planet Hollywood.

A friend of mine tried this at the Bellagio but forgot to mention the "Are there any complimentary upgrades?" AND he slapped down the $20 in full view of everyone.
Apparently she looked at the $20 bill and looked up at him and said "What's this for Sir? Would you like some change?".
