Have a look on the Hertz website under their Adrenaline Collection category. I've hired the Corvette C6 (430bhp 6.2 V8), Challenger R/T (370bhp 5.7 Hemi), Camaro SS (430bhp 6.2 V8) and the Mustang GT (400bhp 5.0 V8).
All great cars in their own right and pretty reasonable to hire if you book in advance. The only issue you may have is dropping the car off in another state unless you are doing a round trip.

I only use the big rental firms like Avis or Hertz.
They all have their fun car range which you can check out on line.
A drive up or down Highway 1 CA is great and some realy nice towns on the way such as Monterey, Santa Barbara.......
I like the Mustang but if you want a soft top you will struggle to get any decent size luggage in the boot.
Mine ends up on the back seat.
Never bothered with a Corvette also due to the amount of luggage.
Enjoyed very much this Charger even though it was not a V8. (The girl is a work colleague).

Cuda, I already mentioned it once. Check out the Hertz Adrenaline Collection...
All of them are V8s and all of them are fun in their own way.
As for the Mustang, the standard V6 isn't too bad (the new 3.7 V6 is a tad over 300bhp) but the headrest is sat at such a stupid rake that it's really uncomfortable on a long drive. The GT Premium V8 has different seats and is actually pretty comfy to sit in.

I had a Challenger R/T from SF to LA from Hertz. It was FUN. It might not be the most sporty car, but it did make me giggle like a child
