Country cottages for odd dates over Easter?

We want to have a berak away over Easter, not overly fussed where but somewhere relaxing would be nice (New Forest, Yorkshire Dales, Norfolk coast etc) and would love to book a cottage holiday. Trouble is the dates we can do due to my wifes business are Saturday 7th (evening) through to Tuesday 10th and most of the cottage rental companies (Cottages for you, Welcome etc) only offer Sat to Sat, Fri to Mon or Mon to Fri - any ideas where we can find somewhere for the random dates we can do instead? We can't afford loads of cash hence a cottage rather than a hotel. TIA....
