Single, late 30's, where to go on holiday?

As per title really.
Enjoy active holidays, don't mind a day or 2 lounging about, but would prefer to be doing something.
Enjoy sight seeing, rafting, MTB ing, walking, done a bit of diving, something that may provide a bit of a challenge.
Budget, £1000 for a week, bit more for 2. UK, europe, USA ...... Not fussed either way.
Any ideas?
