Dover - Calais - ??? - Toledo

Hi all, I'm planning a trip down to Toledo. If I want to avoid motorways/auto-routes and to incorporate as many "long section of interesting roads with low traffic volume" as possible, which sections of roads should I incorporate? I am hoping to set off Wednesday morning in an MR2 (n/a so not really torquey for speedy overtakes) with the aim to arrive in Toledo on Friday afternoon.
