Off to Nepal mid October and staying at this place just outside Kathmandu for 4 nights. Going for a bit of a chill out and do a bit of hiking, nothing hardcore - gentle strolling will be the order of the day - for me anyway, wife has little legs hehe

Is there anything else that is a 'must do' while we're there?

It's been many, many years since I stayed in Kathmandu.
However, you could take a walk up to the Stupa, Swayambunath.
We really enjoyed the exploring around the old streets of Thamel and Bashantapur. I have no idea if it's changed much. It used to be like I would imagine a Biblical scene; narrow streets, buildings that seem to lean into one another, on the second or even third level, unmade dirt roads, dogs, cattle and people everywhere. It's not unusual to turn a corner to see a buther carrying out his trade in full view of the passing masses. I saw a dog run in, snatch a leg bone and charge off into the distance - that doesn't happen in Waitrose!
The bridge across the river to the Stupa was a good vista point. Farmers used to lay out their wool on the river bank to wash and dry. Trading took place right there.
Further down the river, the sandalwood funeral pyres burn away; the remains being swept into the river.
Many hotels have roof top bars for sunset drinks.
If you are there early enough in October, you might get to see the Kumari. This is a young girl, around 6 or 7 years old, who is believed to be a God. One of the few places on earth where you can see a living God.
If you have time, a trip up to Pokhara is worthwhile - wonderful mountain views.
Truly one of my most favourite places on earth.

Jesus H Christ!
A spa and golf course????? It never used to be like that. I suspect if it's changed to that degree, I wouldn't recognise half of what I wrote about?

Ref the Everest flights, these can be amazing. All depends on the weather. The flights used to be operated in ancient Soviet helicopters, with fish bowl viewing ports. These afforded brilliant views. I think they also run some more modern light, fixed wings too.

Ummm - Missus has firmly vetoed that now given recent events.
