Holland/Denmark in November

So the gf and I are planning another road trip, this time with the touring so we're looking for places to visit. Got a set of winter tyres, so hopefully the cold won't be a limiting factor.

Option 1) Dover to Dunkirk and then drive to Holland via Belgium
Option 2) Harwich to Hook of Holland

Both would take a similar amount of time, ferry from Harwich is quite expensive return.

After that, options are open. I was thinking some time in Holland (gf has never been to Amsterdam) and then a longer journey - perhaps Berlin, perhaps Copenhagen.

Any opinions/experiences much appreciated
