Malaga/Seville/Granada etc in early July

A cancelled pre-covid trip to Granada has morphed into a potential 10-ish days around the area this year. We definitley want to see Granada, but also want a bit of beach time hence Malaga.

Does anyone have any suggestions for an itinerary from Manchester or Liverpool, hotel recommendations etc? Is Roquetas del Mar out of the question as an alternative beach destination? I'd prefer train travel to car hire but happy to drive.
