We had 1 night there last June. It was a very last minute decision as the GrossGlocker was closed due to snow, so we needed to find an alternative destination for 1 night. It was fabulous. We definitely didn't see everything, but we had a great time and saw plenty. We also saw enough to know that we definitely do want to go back there.
I would say 3 nights would be about right. To get the most out of it, I think you do really have to play the tourist, ignore the prices and just do what you want. A Gondola ride is a must, and drinks and nibbles at a bar overlooking the Rialto bridge was also worth it.

Im looking at the option of a short break in April but I imagine its a tourist trap and I'd rather see the rest of Italy a bit down to Florence.

We went for four days in August 2017; staying at Hotel Gardena. It was a big wedding anniversary, we crammed a lot in and really enjoyed it. We got a private speedboat from the airport to the hotel door and got round most of the favourite attractions. We got a four day water taxi pass, excellent value. The small restaurants we found down the side streets were very good.

Must be 11 years ago now but stayed at the Molino Stucky on Guidecca and got the hotel boat across the canal to the main bit (minutes). Nothing not to recommend about it. Stay on Guidecca for evening peace though….

3 to 4 days will be fine.
I wouldn't waste money on a private taxi from the airport - the water buses were just as fab!
I expected Venice to be more expensive than it was - food was very reasonable, and beer and Aperol were as cheap as anywhere really.
We did the gondola, as my wife really wanted to, and to be fair, I enjoyed it too.
We did a lot of walking!
