South(ish) of England Spa Break in December Recommend

Hello all.
Wife and I would like a mini-break of perhaps 4-5 days in early December. I just can't be having airports these days, so I'm after recommendations for a very relaxing spa hotel type break in the south of England (South of Manchester is fine for the right place).
Obviously weather isn't going to be great, but if we can get out for walks then fine, not a deal-breaker though.
Having things to do is important, and at 60 years old we like museums, art galleries, castles, National Trust places etc... you get the idea.
We love our food too, but there are always good eateries to be found.
A Google turns up many places, but there's nothing like a PH suggestion IMHO.
Budget? Not a huge consideration, but we do like value.
