With little information of what you have done before or likes and dislikes it’s a bit hard to give advice.
Shopping for ‘crap’ in Shenzhen, there are plenty of counterfeit goods, especially electronics. Unless your thing is showing off a fake Rolex and saying “Guess how much this costs” I wouldn’t bother.
Getting visa is easy, but Shenzhen is just another big city with little to differentiate it. However, Guangzhou is an hour away easy to do by train and plenty to see.
Macau, is an easy day out, the size of the development of the gaming industry is astonishing. A visit to ‘Fernando’s’ is worth while a Portuguese restaurant with no English on the menu and a grumpy owner.
Depending on your fitness levels H.K. has some outstanding country parks with excellent walks, all accessible by excellent public transport.
Food is on a whole new level, you really can find food from anywhere in the world, plus every region of China.

I've never been out to Aberdeen - worth it?
Looks like there is a night race card at Happy Valley so I'll see if we can get to that as well..
We did do a trip out to Sai Kung a few trips ago and out on a boat trip to the salt farms... may look at that again...
No interest in Disney or the waterpark as not travelling with kids..

No 6 bus from Central Bus Station to Stanley Village gives and excellent tour of HK Island for £2 return. And because your getting on at the start, you can sit on the top deck at the front.
Quick food tip, Cafe Du Coral. It's a fast food chain with branches all over, that sounds French but serves great value authentic local food. It has large screens in English where you choose your food with pictures of what you're ordering. It prints out a ticket, you take that to the counter where the chef snatches it off you, screams at you something you cannot understand, and 2 mins later gives you a tray with your meal, and screams at you again.

If you've been before, but travelling with a newbie, then you'll do all the touristy things again (see lots of posts above, but also Star Ferry across the harbour) . Mostly I missed the food.
Shenzhen - Very modern, slightly cheaper transport and food. As this is PH, you can nose around the car showrooms in shopping malls and browse the weird EVs there.
