Xmas 25 - where to go

I'm totally done with everything christmas and plan on opting out for 2025 and will leave all them behind so I can enjoy myself for once.
Where in the world can I go for 5 to 7 nights (22/12 - 29/12 or thereabouts) that will be open on christmas day so I can go and eat / drink etc.
1 person.
Ideally half board or all inclusive.
Includes transfers - i plan on not being fit enough to drive.
Doesnt need to have stuff to do, I just want to sit on a balcony somewhere a bit warmer, read books and get slowly pissed on bottles of beer or wine.
Budget circa 1 - 1.2k im thinking
Just been on hays travel and looks like Madeira is an option - never been but I'm thinking they may be too christmasy and restaurants and stuff wont be open on christmas day.
Any other suggestions?

We've been to Malta from Christmas. All the restaurants were open on Christmas day, and certainly the big hotels will be doing Christmas day meals as well, so you will not struggle for food on the day.
Being a very Christian country, Christmas is very big there, but not like in the UK; so it's big but also low key. And it's not massively busy with tourists either as well.
We have also been to Madeira, but in the first week of New Year, but you can see that again, Christmas is very big there, bigger than Malta I would say.
So both would be ideal.

Spain at Christmas is very different to what you (& I at one point) would imagine. You know it’s Christmas, but it’s done in a subtle, classy way - not like at home where it’s just rampant consumption.
