iCruise allows you to track prices IIRC.
I did Transatlantic on VV and really enjoyed it. We had some light chop for the first 4 days but after that was a bit smoother.
I like the lack of port days as it forces people to socialise a bit more. That said a Cunard etal crossing is on another level so I dont know how they work.

Regarding best price it’s generally when they first go on sale or last minute that give you the best prices.

I like dealing with Sovereign Cruises - https://www.sovereigncruise.co.uk . They tend to be competitive on price and have exceptional customer service. I've used them many a time t book Cunard, Princess and P&O trips.
I took the QM2 from Southampton to New York (and then up to Boston and Halifax) for my honeymoon 10 years ago. It was supposed to be a once in the lifetime trip.
I've now done something like 20 cruises, with the vast majority being on Cunard. We enjoy travelling this way (slower pace of life, less stress). I've done the transatlantic 3 times, once from Southampton to NY and twice the other way (Cunard used to offer flight + cruise for as low as £999/person - we'd book this for a cheap second holiday for the year).
The QM2 is showing its age a bit now, but it's still a great ship. You will get lost on her, there's half decks and a lot of design decisions which don't make sense until you realise it's an ocean liner rather than cruise ship.
