Sardinia - whats it like and where to go/stay?

We are finalising our 2 weeks to Italy at present.
Flying to Pisa, doing 3 nights in Florence, a couple of nights at a Tuscan wine resort before then heading to Rome for 3 nights.
Afterwards we plan to fly from Rome to Sardinia for a more chilled break for 5-7 nights.
Flying into most likely Olbia and back from there to Heathrow, or pending routes into Cagliari and back to UK from there.
We know nothing about Sardinia so where is good to go and to stay? This will be a much more relaxing each type holiday with a lot of pootling around on foot so unlikely to have a hire car. Whats the public transport system like if we do want to see nearby places?
Any advice would be most welcome

I flew to Olbia and stayed just south of Orosei in the vineyards close to the beach. We rented a Fiat Panda at the airport for about £10 a day. I would say this is a must and the public transport would prove to be a hindrance.
We absolutely loved it, the food was fantastic, very friendly people, incredible beaches and the mountainous interior of the island is just as pretty as the coast, with interesting and quirky villages and towns. We rented a small, basic villa for £50 a night.
There's ancient Nuraghic sites everywhere, a must see.
We've been to a lot of europe in our motorhome, but Sardinia stands out as my favourite holiday. Can't wait to go back.
I think most people head north from Olbia to Costa Smerelda. This seemed a bit too posh for us, with 5 star hotels and resorts, not really our thing but I'm sure it's just as pretty.

Have stayed up by Olbia and down by Cagliari, as above you definitely need a car, it's a big island and i'd not want to be going about via bus! It's a great Island with fantastic food and history, but not exceptionally scenic with dramatic views, being mostly rolling hills. It can get very hot even out of season.

Out of season (at least in the south) everything is closed. There was very little to do.

In what way, I went in October 2023 and everything was open and temp was cool first thing but got up to high 20s, early 30s every day, with no rain to talk of. Evenings were absolutely spot on for sitting outside.We went to Sardinia in October a few years ago and it was..... Not great.
We’re heading to Sardinia in September, it’s a stunning island, we will be at the end of the season which will mean the beaches will be a bit quieter.
I haven’t booked any accommodation yet but as we arrive into Olbia a couple of nights in San Teodoro as a start then over to Alghero finishing up in Cagliari with a stay at Palazo Doglio.
Last time we got the ferry out to La Madalena (Palau is where some of the J Bond Lotus scenes were filmed), beautiful empty beaches.
Foods good, wines excellent, enjoy.
