Paris In October - Girlfriends 21st: Things to do?

Aside from the obvious... I am taking the Girlfriend to Paris for her 21st, which is in mid October of this year.
Planning on doing Virgin > Euston (1st class) and then the Eurostar. Travelling Monday Morning/Afternoon and back on Friday around Midday/Evening
Now having never been I am looking for ideas on places to go, things to do, places to eat. We have 3 full days there; so there is the Louvre (probably do the half day ticket...cant see it holding her attention for a full day), Eiffel Tower, Notre Dame and a River trip which should account for about half of this time....
What else would you lot suggest is worth a look, I have heard the catacombs are good, but underground trips might not go down to well....any other must do's?
Places to eat: I need a really nice place for a meal one night, somewhere close to the Eiffel tower (nothing stupid £££ though) and suggestions for other nice places to eat (although I dont think it's going to be too much of a problem)
Hotels: Looking at booking through the eurostar website and have found the Best Western's, being part of a chain will be dependable and to an acceptable level (dont want to end up in some dive) and gets good reviews....Any opinions? or other reccomendations, not to far out of town and 2/3 star (Train/Hotel seems to be possible for around £200-£250 each)

So I have heard, the exhange rate not helping but *may* firm up (i'm hoping...not likely though).Probably should explain that I am a student (well for another few weeks) and so a Hotel is just a base and i'm not looking for anything other than clean and respectible (hence a chain should do perfectly)
Travel and Accomodation for the 2 of us comes in at around £500-£600...prices are high at the moment but when I checked a while ago it was comfortably at £500 for a decent standard in October
Spends are going to be the problem, tourist attractions are not expensive, particularly as juniors you get things cheaper (the louvre is free for instance) but Eating out is going to be pricy....hence my desire to move away from the ususal rip-off tourist hotspots.

Don't bother with the Louvre. Go to the Musee d'Orsay instead. So much better. The Louvre has one decent work amongst countless tat. d'Orsay has coutless decent work amongst a couple of pieces of tat.
I wouldn't totally discount the Louvre - but do agree: Musee d'Orsay is excellentTip for both (and any others you want to go to) - there is (or was) a museum pass you could get which means you can jump the queues (at the Louvre I think it was even a different entrance)
A good thing to do in Paris is just wander; take a trip from the Gare de Nord through Saint Denis towards the Seine; you'll see quiet streets, the rag trade quarter, what remains of the seedy quarter, a bit of touristy Chatelet les Halles for a quick coffee as you watch the world go by, then onto the river, across to Ile de France, spot of lunch on the rive gauche, pop across to the Louvre etc.
A great place to wander and discover nice places together. It's a bit expensive with the euro and Paris was never very cheap at the best of times, but they do have standard hotel rates so you shouldn't get too ripped off if you decide to try a local hotel, likewise with the food, most places have a lunch menu that's normally basic but good and fairly cheap.

Père Lachaise Cemetery (Jim Morrison and Oscar Wilde are buried there, alongside countless other grandees) and the nearby district of Belleville are worth a poke around.
