Whereabouts did you have in mind? Highlands, Borders, East, West, Islands? Lots of good suggestions - just need the field narrowed down a bit

I can highly recommend here;

http://www.dunheanish.com/

Oban is not that special but you can get the ferry to mull from here. If you book ask for room four as the view is fantastic. Had dinner at a restaurant on the harbour called "e e usk", was very good.

If you're visiting Glencoe, then this place is pretty good. The rooms need some TLC, but the food ain't bad, and the views aree stunning.

We stayed at the Tobermory hotel, nice place and Tobermory is a great little town. The hotel is privately owned and does a good dinner, best to book you table when you book the room.

Forget John o groats

Its a sign in a car park and the roads are flat and dull so feel free to cut off the top north east bit of scotland

But under no circumstances are you allowed to miss the areas around applecross

Inverness Palace & Spa
Lovely pool and very handy for best restaurant (Rocpool).

Plockton (on west coast) - picturesque village, a couple of good hotel/inns.

Cameron House on Loch Lomond was very nice.
Chartered their 42' cruiser on the Loch and my son had a wonderful time driving it.
