Take Sterling, in notes of £10 and £20 denomination.
Make sure they have NO markings on them... no pen scribbled by cashiers or coloured marks from pens that check authenticity. We had issues with these and £50 notes in both a resort and in Havana.
Do NOT take dollars, they're not interested. No experience of taking Euros, but I'd suggest you stick to low denominations and "clean" notes, as above.

We stayed AI, and found we barely needed cash. Take Sterling or Euros, and exchange some for Convertable Pesos once there. This is the official tourist currency.
Also take gifts that are hard to come by - simple medicines/bathroom stuff and school equipment for kids. Tipping is frowned upon, but these gifts are good.

...I have been to Cuba several times.....take Euros or Sterling.
As was mentioned small gifts....old make-up and medicines are well appreciated...also crayons and clouring books and baby cloths.
Also tipping is certainly not frowned on......certainly not in the three different resorts and three different areas in which I have stayed....in fact it was much appreciated.

Depends. If you actually want to see some of the island, rather than just a resort, then take some cash. Even the AI resorts of trips out, and they prefer cash payment.
