The upstairs gourmet restaurant in the French bit of Epcot is fantastic - get a window seat for the fireworks and have the assiette des deserts, which is the finest desert I've ever had.
Off Disney the best restaurant I've been to is Charley's Steak House. Get the 50oz fillet for two: the finest meat I've ever had.

Charleys is the best! Wish they would open one up in the uk some where.Proper melt in your mouth steaks!
Another one recommended if you like Italian. Bergamo's in the Mercado village on International Drive. I prefer that to Charley's tbh.
Plus Tony Roma's opposite the Mercado. amazing ribs. Every trip to O rlaando we visit each one of these at some point.

The Mercado on I-Drive was flattened last year, so forget that one.
Charley's is OK - but there are much better places if you are a carnivore.
The very best is Del Frisco on Lee Rd (just north of downtown) www.delfriscosorlando.com
Ruth Chris Steakhouse in Winter Park is very good - and The Capital Grille on I-Drive is also right up there.
Charley's is alright - but a bit tourist-fatigued, if that makes sense. For a more casual cholesterol and protein-fest, Texas De Brazil on North I-Drive, takes some beating.

So don't forget those two.

I'd say buy a guide book before you go. We went there last year and did a load of things we wouldn't have known about without it, for example:
- Show/meal (you sit in a kind of auditorium with a stage in the middle and they do a live show while you eat. gets book up quick though)
- Helecopter ride over orlando
- Swamp boat ride to see crocidiles
- etc
If I had to give you only 2 more tips they would be:
1 Get to the parks before they open, then have a few goes on all the biggest rides (bit of a dash about but worth it). By the time the crowds arrive you'll have done all the big stuff and can spend the rest of your day a bit more leisurely without long queues.
2 GO TO DISCOVERY COVE!! <- This is awesome. It's a smaller private version of sea world where everything is all inclusive. So you have to book months in advance, but SO worth while. You rock up and they give you a pass and a time for your dolphin swim. You then spend the day lazing on the beach, swimming in the pool, swimming with manta rays, swimmnig with coral reef fish etc. The food and drink is all inclusive and they restrict numbers so it's not croweded (makes SUCH a difference from all the crowds elsewhere in orlando). Then at your allotted time you go over to the dolphin area where you get a talk about them, then you go into the dolphin pool (kind of like an artificial coast line with sand) and the dolphin swims past you can stroke them etc. They also do a few tricks and then they take you for a ride on the dolphin one at a time. Bl**dy brillant day and a real highlight of the trip. Sorry if my explaination isn't very good. Hit their website and do some reading on it if it interests you, I think it's WELL worth doing. Only thing I'm not sure of is whether it will be open at the time of year you're going.

Another vote for the helicopter ride here. Me and my g/f done this, just the $50 one (they range right up to $300-odd), up in the air for about 5-10 minutes but the views are amazing, gives you an idea of how big the area really is. It's right next door to Quality Inn Plaza on I-Drive (where I stayed). You can take your own camera up, or buy a cd with pictures after the trip.
Islands of Adventure is awesome too, some of the best coasters i've been on.

As lilCat said, Texas de Brazil is great if you're a meat lover although I reckon O'hana in Disney's Polynesian is better.

I've been to Orlando every year for the past 7/8, and went on my honeymoon there (stayed in Universal Portofino Bay-not worth the money), so here are some ideas away from the norm for Orlando, which may or may not take your fancy:
- Check the websites and calendar for Hard Rock Live at Universal's Citywalk, and House of Blues at Disney Downtown, some big bands/acts play there.
- Go and see 'la Nouba' at Cirque du Soleil in Disney Downtown, very impressive show.
- Drive up to Park Ave, Winter park, very cool place where the rich live (Tiger Woods apparently) nice place to spend a few hours and eat and drink, lots of expensive window shopping for the girlies.
- Drive up to St Augustine and take the tour, lots of history and a winery with tasting sessions.
- If you're going to the space centre remember it's on a nature reserve, drive around and stop at one of the excellent deserted beaches where dolphins swim freely.
- Go on a hot air balloon ride.

As you're on here - assuming you're a petrolhead - do the Richard Petty Race School at Walt Disney World - the track's actually at the edge of the parking lot and it's a one mile trioval.
You get to drive a proper NASCAR Stock car - just a bit detuned and they time you. I had a ball 'cos I was second fastest on the day - nothing like a Limey blowing the Yank's doors off!
( They do passenger rides too in case the Memsahib chooses not to drive)

Ive been before when I was younger but cant really remember much of it.
Probably going to stay on International Drive, mainly central for everything then yes?
Obviously going to do the big parks, Disney, Universal, Sea World.
Keep the food reccomendations comin, like the sound of big steaks!!
