Tiger Lily. Highly recommended. Try for the Black Room (if you're well wedged).

The Witchery or Le Monde are worth investigating.

Prestonfield House Hotel. A little way out, but a stunning location.

I can recommend the Sheraton roof top pool especially if it is snowing.
Magic!

Depends what you consider "nice". If you're out for posing, then George St is the place to be seen having a better time than you really are having. Not massively my cup of tea, but if you like ogling WAG dressed fillies then it's the place for you.

Cafe Royal is a good proper Scottish style bar right in the centre of town. City Cafe is a cooler laid back pre-club type place.
No really been out in town properly in ages, as my local does decent grub and a good pint, and in these lean times I like to help good places near me stay in business. It's called the Caledonian Sample Rooms, and is handy for sauntering round to Murrayfield.
Suppose I did a few festivally things, but it was all in the venues that are only open for the festival so that's not much use to you I'm afraid!
