Look near the Kunstmuseum on the west side of Schlossgarten. There is an underground shopping mall car park nearby that is cheap and secure. There are also bars, restaurants, shops etc to keep you entertained, so if you look around this area I don't think you can go far wrong. I can't remember the name of our hostel. Sorry I can't be more specific, but this should be a start until somebody else more knowledgeable comes along.

When we were there the town had organised a winter garden in the square.

Bit late now, but I can highly recommend this hotel in picturesque Herrenburg, about 15/20 miles from Stuttgart, about 25 mins car/train journey away.

Have stopped at this lovely hotel several times, close to the Black forest....

We stayed there last June. Very happy with it and secure parking. Walking in to the town center was 5 to 10 minutes.
