Dubai uses the UAE Dirham. It's tied to the US Dollar but I don't recall seeing the USD used in the Emirates. Just buy some Dirhams at the airport before you go or from a hole-in-the-wall in Dubai.

Maldives I believe are happy to work in a hard currency so USD tends to be the most acceptable. Prepared to be corrected but I'd guess they'd accept £ or Euro too.

Yes, dirhams for Dubai but you're chucking money away if you get them from the airport

For Dirhams grab £100 or so from the high street, then get more out in a hole-in-the-wall whilst there. USD for the Maldives.
Sounds like a great trip. Enjoy.

Get US Dollars for the Maldives.

I've just been and (in my inexperience of tipping) pulled out 50 one dollar notes thinking I’d be tipping every round /meal etc... Didn’t happen the two barmen were thanked and tipped at the end using $10 notes and so was the room boy, waiter and other staff who had made our trip something i wont ever forget.

What atol you going to?
