Weekend away recommendations please

Hi,
next weekend is my first wedding anniversary I'd like to take the wife away somewhere for one night (nothing like leaving it to the last minute eh).
Ideally no more than 3 hours drive from NW London with some nice roads en route and with enough to keep up amused for an evening and most of the next day. A nice hotel etc etc. Prepared to drive a little further if its worth it but it will be just a one night stay so can't be too far.
Money wise things are still tight so £500 a night suites are out of the questions, less than half that for the night's stay would be nice.

although I'm sure i'd enjoy the drive there and back there's also a distinct possibility the wife will kill me if I make her suffer a 10 hour road trip over the weekend! Looks nice for a longer stay in future though.It might be slightly more than three hours drive.

Hmm.... stretch it to 4ish hours in a car and go stay at Castell Deudraeth at Portmeirion...
