I lived and worked in Hongkong for a few years.
Tell her she has no problems, and that most of what you find on the shelves at Tesco is also available there. Eating out may be a different matter, but should be safe enough with salad type dishes.

Historically most far east restaurants aren't really set up for nut allergies. A few of the western hotels will be better, but generally the cuisine has so many nuts in it, they've killed off most people with issues in a natural selection sort of way.
As Graham says, doing self catering isn't a problem. Eating out...well you'll probably find that however much you say you don't want nuts, they'll add them anyway as it'll be better with them!

For vegetarians, just go to a Buddhist restaurant. Kung Tak Lam is a good one in Causeway Bay.
Yep, the standard cooking oil does tend to be peanut oil (but rape seed oil on the mainland, go figure)
Hmm, best to get your hotel concierge to write a note (in Chinese) saying that she is allergic, and do they use it? At least you can show that to the restarant manager, and leave if they can't accomodate you
