As per title really, I seem to be suffering some conflicting information, both guaranteed 100% the case, and need some clarification.

I have less than 6 months on my passport. My new one is on it's way. Is there really anything stopping me booking the flight, in May, with Easyjet, to Valencia, using my old passport number, and amending the booking details ie. my passport number, online, when my new passport arrives?

I was initally told, despite my scepticism, that you can't make a booking to Spain with less then 6 months left on your current passport, so I have applied for a new passport, 6 months early, and waited patiently while prices have gone up daily only to be told now that this is not the case and that you submit your passport details shortly before flying for forwarding to the Spanish authorities.

And of course, do you think there is a contact number to possibly ask the airline or anything in the FAQ's...

When I went to Spain in October I didn't need to supply the passport details until a couple of days before when I checked in, so you are fine to book it now. You can just go into your account when the new passport arrives and fill them in.

You can go ahead and make the booking without providing your passport details at all (you might get a warning about it, but the booking still goes through). When you receive your new passport, just update your details (IIRC it's in "manage my bookings") on Easyjet's website. It worked for me when I booked a flight last September, knowing my old passport would expire at the beginning of this month. Details now updated with new passport number, job done!

In my experience within the EU the 6 month rule that many countries have around the world doesn't apply. I've travelled to France with 3 weeks left before - a polite immigration official reminded me as I came in with a week left!

Of course, EasyJet may have a different point of view!

I am in a similar boat, easyjet / any other airline do not require any special term on length of passport, either do spain / canaries. I am travelling shortly, and only have a Month left on my passport, and am fine to travel, as I am back before expiry.
