Lisbon for a stag weekend?

Right, I’ve read some, what would appear to be, great advice on here in the past. So I’ve taken the bold step out of the lurker’s shadow as I now need some help.

I’m starting to organise my big brother’s stag. I’m trying to avoid the Eastern European cities that are notorious for drunken stag parties.

There will be 14 people all around 30. The only criteria I have in mind are; sunny, go karting, another outdoor activity (deep sea fishing, paintball, etc.) and some form of nightlife.

I’ve been doing some research and Lisbon seems to fulfil all the requirements, but I have no experience of it. Can anyone suggest some bars/clubs in Lisbon? Any other activites we should do? Hotels? Or anything else I haven’t thought of? I haven’t had to do this before. Or failing that, an alternative location.
