Cheap Holidays

Has anyone got any advice on what is the best way to get cheap deals?! The situation is this, have a week booked off for late September (the last week I think) and I am unsure whether I should be searching for a deal now, or, as we are not really bothered where we go, bit of sun and nice food for a week is the only criteria really, just look on teletext the night before and then head to the airport?
Have spoken to a couple of Travel Agents and they seem to think that most of the real last minute deals have had there day as the companies prefer to return the rooms to the Hotelier, is this the case?
If anyone has any experience of this or good websites to visit it would be much appreciated!
