Phoenix/Tucson, AZ - What to do in early September?

OH and I will be spending a week on a raunch between Tucson and Phoenix, AZ in early September. Our itinerary has space for a couple of days either side of the stay.

Given that we will be riding in the desert for 4 days, I think we may well be "sceneried out" by the end, regardless of how amazing it is, so is there anything else worth doing before we leave AZ - theme parks, outlet malls, sights, etc?

Well, it's an idea, but I can't see the OH being up for that!
