European Tour advice, first timers

Hi, just looking for some advice from more experienced tourers than myself. The missus and me are looking to do a mini tour of Europe next year. Essentially, she wants to go to Cote D'Azur, to see the glitz and Glamour, I fancy stopping off in Bavaria, essentially Kaufbeuren, where I did some Military training in the late 80's.
We stay fairly far North (Aberdeen), so it would take us a day to drive down to Folkestone (stop overnight) then looking to go from Calais to Kaufbueren, stopping there for maybe three nights, then down to Cote D'Azur, staying at possibly Menton, based on a thread I read on here earlier. We would probably stay there for about 5 nights, spending most of the time visiting the villages and tourist towns in that region. We have two weeks in total, and although I am not adverse to driving a long distance on Motorways, I'm sure we are missing out on some exceptional scenery, villages and excellent roads. Given that we would have 2 weeks in total we have the flexibility to stop off in different villages en-route if beneficial.
I do fancy a blast on the Autobahn at some point, to gobble up the miles and to use some of the potential of the car, but also like a challenging road with character, so long as it doesn't slow down progress excessively. As this is the first time I will have driven in France or Germany..or the bits inbetween, any advice would be greatly appreciated. Our car is a 3.0 Z4 auto (new style) and we intend to be travelling fairly light so that we can have the roof down, especially in the sunnier climate of the Riviera. Potentially crossing to Calais on the train (new to us also)
I must have about 30 tabs open, from Route planners, to hotels and B&Bs and it's all getting confusing, whereas your experience may help us.

.....check out the RAC web site to see what you need to have in the car for each country you aim to visit and make sure you have the car documents when you travel....I take my car over every year for a good blast just returned from a trip to Spain and France.....went overnight on the Plymouth/Santander ferry and returned via Cherbourg on the fast cat, did 2350 miles in total in two and half weeks.
