UK weekend break ?

Need to take the Mrs somewhere as it's her birthday this month, for a short break pref. in UK , and am looking for somewhere interesting - Have done the Lake District, Cotswolds, and am looking for somewhere cosy, with some interesting places to visit nearby.
Although I would love a driving holiday in Snowdonia - it's HER birthday so that would probably NOT be a good idea

Why not?I'm off to Snowdonia in a few weeks with the OH. She knows we're off to see gorgeous scenery and stay in an olde worlde gastro pub; I know we're 5 minutes away from the 'triangle. Everybody's happy.
The Groes inn near Conwy is perfect for a weekend break. They have a deal for couples too, the food is lovely and the owner is a fellow petrol head. NO I dont work there, but ive stayed with them many times. 
And its a short drive to Betws-y-coed, Conwy castle, Beddgelert and Colwyn bay to keep her happy, you could just go via all the good roads !

A few suggestions that aren't too far to travel to from where you live:
York is good, and amazingly quick by train from our part of the world (Reading to York is only a few hours). Attractions include the railway museum (she'll love that!), York Minster (which you can go to the top of for some great views, or used to be able to anyway), and the city walls (which you can walk around). I stayed in a great little hotel called The Churchill just outside the old city, which has safe parking, and once you're there you can just leave the car there and walk everywhere because the city's so compact. I have stayed in some awful hotels in York, but the Churchill is not that expensive and each room is individally furnished. The only downside of York is a lack of nice places to eat, but there's enough for a weekend I'd say.
It's a bit far, but I had a nice break in Pol Pero in Cornwall a while ago. The Eden Project and Tintagel are easy drives away, and our B&B was perched on a cliff with great views over the old village and bay. The village itself has a surprising number of nice restaurants.
Lewes, in East Sussex, is nice. I used to drive down from where we are every Thursday - it's about two hours away by car. I'd recommend Pelham House Hotel (not the other one nearby...
). The hotel's lovely, and Lewes has a nice little castle to look round and some lovely old pubs serving the local real ale. There are a fair few attractions nearby. I took my gf Llama walking for her birthday at the nearby Llama park in August, which she loved.
If you've got a bit more to spend, then for her birthday I took my gf to the Chateau Tilques in Pas-de-Calais a couple of years ago. It's only about 35 minutes from Calais, and there are a few interesting things to see and do nearby. The chateau itself is small but lovely, and has a fantastic restaurant. The price of a room there compared with rip off Britain was low enough to make it comparable to a UK break - just make sure you're in the chateau rather than the annex, which isn't bad, but obviously not as special as the chateau itself.
Poole is another choice, although it has a lot less character than the above suggestions. The hotel du vin is nice, and I spent about three months staying there on business once. Brownsea Island is a nice place for a morning out, with a boat going there and then off round the harbour under a minute's walk from the hotel. There's also a company called "Jurassic Coast Kayak Tours" who do sit on top kayak trips for all abilities along the coast from nearby Lulworth Cove, which is a nice morning out. A five minute drive from the hotel is the uk hobie cat centre (sounds big, but is just a hut on the beach!_, and for only about £35 they'll take you out on an 18 foot racing cat for an hour or two, which is great fun. Your gf may also like looking round poole pottery, so whilst she's doing that run into the next street, where there's a very friendly Lotus dealer right opposite the Sunseeker showroom
