Paris - hotel and restaurant recommends

Hitting Paris (for the first time in YEARS) in december and wanted recommendations of hotels.

Also if someone could give advice on which of Paris' 14, 3 michelin starred restaurants to try, I'd appreciate it.

Pierre Gagnaire was amazing.

The lunch at Le Bristol is excellent value, and great food.

We stayed at the intercontinental 'Le Grand Hotel Paris', last time we were there. Its an excellent hotel and in a very central location.
