The National gallery was quite interesting, the castle was rammed with tourists, so we stayed clear. We had a picnic at the Scott monument.
For me the best stuff is outside Edinburgh such as the Glenkinchie Distillery, the tour was dull but the guide was a laugh and gave us so many sample Whiskys we were hammered. I spent £100+ at the distillery on whisky, before the tour I couldn't stand the stuff.
If you like your Ales try and find a pub with Stewart brewery's Edinburgh Gold or Stewarts 80/-(shilling). Absolutely lovely.

Hi
As for places to stay, depends on budget as usual and November should be quietish so get yourslef onto Laterooms and check out some places for any deals.
Centre of town would be best as that's where you are likely to want to be for shopping and the 'tourist' stuff.
Ideas: Castle/Royal Mile/Holyrood House/Museums/Art galleries etc etc. You'd be best to pick a few things from http://www.timeout.com/edinburgh/ as there really is too much to see/do in 3 days.
Bring somthing warm to wear!

I stayed here last year http://www.chester-residence.com/ it wasn't particularly cheap but it was fantastic, more like an apartment than a hotel room and not hugely expensive. Thoroughly recommended.I've stayed in the travelodge for as little as £9 a night, on the royal mile. We always book Edinburgh when travelodge release their sale.
Also stayed in the radison on the royal mike too. Very nice and great location.
Other than shopping, a bit of sight seeing and trying a few bars we normally run out of things to do.
Would love to go when the tatoo is on though.

If the weather is good head to Holyrood House then climb Arthur's Seat for great views of the city. The Botanic Gardens are good too. If you have never been before the open top tour buses are a good way of getting some background on the place and you can jump on and off as much as you like. Climbing Scott Monument is fun also. Royal Yacht Briannia is quite interesting. Loved the story about General Norman Scwarzkopf and the engine room.
Do also go up Calton Hill, and do Camera Obscura, particuarly on a clear day.
The restaraunt scene is really good these days - here are but a few of my favourites:
Michelin - Kitchin or 21212 (on Royal Terrace)
Mid-upper - North Bridge Brasserie, Cafe Royal.
Mid range - Dogs, Sea-dogs, L'escargot blue, Centotre, most of Leith is good.
Bargain: Chez Jules for £7 steak frites, Malaysian Delight for the Roti, Pani Solinska (polish)
