Recommend us a great family summer holiday - 3 Kids

Had the concession on skiing this winter in Canada on basis we would go on amazing summer holiday for the family, kids are 4-12yo and SWMBO loves sun. Looking for recommendations, no Orlando ones please - done this one - coming up with some options on my hunt but thought would ask fellow PH'rs
