Motorcycle Tour - Northern Spain & Southern France

So my wife and I are looking to do a two week tour of northern Spain and southern France in August on our Harley-Davidsons.
We are getting the ferry to and from Santander. Having travelled in southern France before in August, I know how important it is to book ahead, be it either hotels or camping grounds.
The intent is to stay in hotels or motels each day and to ride no more than 150 miles per day. With the option of going nowhere for a few days if we find somewhere we really like.
We toured California and Nevada in a similar manner and I enjoyed the 'nowhere to be in a hurry' approach - it makes for a relaxed holiday.
So does anyone have any 'not to be missed' stop offs we should make or any general recommendations about the whole bike tour in general.
