Speedboat trips are pretty fun if you like an adrenaline rush, you mentioned she wasn't a petrolhead so she may not enjoy it as much as you (no excuse to not try and sell it to her though !)
London trips are always good as there's always something new to do. A trip to London, a night somewhere nice and maybe a wander round starting from Southbank (London Eye -> museum -> parliament/big ben -> Marble Arch -> shopping -> Soho for grub and comedy) is always a lovely "mini break".
Otherwise maybe book a hotel somewhere nearby that's got facilities you both will enjoy - somewhere up in Wales with a spa for her and a golf course/near some decent roads for you to just unwind over a weekend.

Flippant, but true.That restaurant she likes? Take her there. Her hobby? Buy her a subscription to a magazine, or a thing she can use to do it. Likes shows? Take her to a show. Likes posh shoes? Take her shopping and tell her you'll pick up the bill (dangerous).
I bought mine a new vacuum cleaner a few months ago. She loves it.
