ETA - topic should read "What use are the coat of arms's animals".

Australia : Kangaroo & Emu.
At least you can eat them.

UK : Lion & Unicorn.
What uses can they be put to?

Bald eagles are a bit big for falconry. Russian bear as a guard dog substitute?

Lions could properly fk up an emu, I reckon. So pretty useful.
