One cat, or two?

I've had cats from an early age, but have had to stop when we moved into a rented flat two years ago.
However, we'll soon (fingers crossed) be completing on a place in a village, with a garden... so we're looking to get another cat.
Question is... one cat, or two? We don't have (nor will have) children, so it or they will get quite a lot of attention from us. That said, we both work during the day so don't want lonely kitties. (This has never seemed to bother previous cats, though.)

I have 2, female black short hair thing and a ginger tom, unrelated. She arrived before he did, she's really timid and used to hide everywhere. He's brought her out of herself a lot to the point where she'll stand her ground in a fight and push him out of the way for food. He's just a big fat tom who licks anything and everything
I got 2 cats for this reason, ended up with 2 brothers from Cats Protection. Definitely better, though they do bat at each other occasionally, but brothers always fight now and again. 
I agree with what has been said already, cat homes very often gets 2 cats who they want to try and keep together. With mine, one is a kitten who has never grown up and the other kind of takes it upon himself to look after him. Separating them would have been very damaging for them both. You can help another 2 moggies in the same situation.

Me and my ex got two kittens when we lived together, they were really entertaining to watch play fighting....though this sometimes got annoying when in the middle of the night. One was more dominant though, and it sometimes seemed the timid one missed out on attention due to this.
When we split up we each took one (wasn't sure it was a nice thing to do but for various reasons was the only option) and i took the more timid one......who has now really come out of her shell.

We have two cats, brothers, from RSPCA rescue home.
Used to have two cats when i was younger and one came off worse Vs car (although he did manage to rip the bumper off as a cruel two fingers up to you mate for not stopping!) After that, the other one changed. It was as if he was bored and he got fat quick from not chasing around the family garden.

Would like to take some in from a cats protection home or similar, however, I am not prepared to jump through the massive hoops they want you to go through - the new house is on a reasonably busy road (2 x 1 hour rush hour sessions - all traffic <5mph) so I doubt we'd fit the criteria, even with a sizeable donation!
If you can afford it get 2. Litter mates are usually best but 2 young kittens from different litters will usually do well together.
Never guaranteed but most of the time it works, if you get one out going that picks on a timid litter mate it's not so good so try and pick 2 similar behaviour kittens, watch a litter and see how they interact with one another, don't pick the bully and the one it's bullying!
There's lots of thoughts out there about stress caused to cats by having too many together (I must have been a contributor, having had 4 until recently!) however it is recognised that family members usually do well. Watching kittens running about together and playing is very entertaining.
