The accepted legend is that some goatherders in Ethiopia noticed that their goats were friskier after eating the cherries from the coffee bushes, so they tried eating the cherries as well. They tasted horrific, so the goatherders experimented with all sorts of ways of preparing the beans that were hidden inside the coffee plant cherries. Boiling them up in water seemed to work.

Only a legend, but it seems to be the accepted explanation.
